Pizza is life, well we think so. If only finding talented pizza chefs wasn’t such a challenge. The two things just don’t seem to co-exist. So we’ve solved the problem. Part Baked, Wood Fired, Neapolitan Style Pizzas – Ready In 70 Seconds! Perfecting ready-made pizzas is something of an obsession for us. And as a result of years of research, sampling and testing, we know this is the most authentic part-baked pizza in the UK. Now you can sell authentic wood-fired Italian pizzas without the stress, investment and risk of hiring a trained chef.
THE BIGA. THE BETTER!
We believe in keeping things simple. Unlike some ready-made doughs, ours is just as it should be, traditional with no added anything.
We use the traditional Italian Biga 24 hour fermentation process which is a labour of love but gives a much fuller flavour. Obsessed, like we said. Our fresh bases have up to a 10 day shelf life, or you can freeze them.
DOUGH. AN ART AND A SCIENCE.
Any pizza chef worth their salt will tell you there’s an art to stretching. We’ve spent years watching and learning, and the result speaks for itself. We hand stretch the bases, then wood fire them for half the cooking time, so you can finish them off at your end. Simple. Splendid.
TOPPINGS. CHERRY-PICKED.
Unsurprisingly, we have high standards when it comes to toppings too. Our friend Marco, a well-known pizza aficionado makes and supplies the perfect pizza flour.
We also insist on fior di latte (flower of milk) mozzarella, San Marzano tomato sauce and grated Parmigiano-Reggiano cheese. Sourcing amazing toppings from lovely independent makers gives us huge joy. We hope it brings you some too.
